It’s been so cold these past few days, and we just happened to find the perfect warm winter recipe.  We love the versatility of this dish because it can be served as a side, tossed into a pasta dish for dinner or even a salad at lunch.

Parmesan-Roasted Cauliflower

Cauliflower and Onion petals

Ingredients:

1 head cauliflower

1 medium onion, sliced

4 thyme sprig

4 unpeeled garlic cloves

3 Tbsp. olive oil

Salt and pepper

Parmesan cheese

 

Directions:

Preheat oven to 425 degrees.  Cut cauliflower head into florets; toss on large rimmed baking sheet with onion,thyme,garlic and olive oil.  Season with salt and pepper.  Roast for 35 to 40 minutes, tossing occasionally.  Sprinkle with grated Parmesan cheese and toss to combine.  Roast for an additional 10 to 12 minutes. Serves four.
