How to cut herbs correctly

Herbs are delicate and bruise easily.  So take the gentle path when cutting your favorites.  Gather a handful or mound of leaves on the cutting board.  Using a sharp knife, slice through the herbs.  Make just a few precise cuts.  For larger leaf varieties like basil and mint, try delicately tearing them into pieces.  No knife needed.
